Good beginner's species for a local landrace project?

I think there is even more reason to landrace them if they grow easily. I just fairly recently realized that there aren’t any (or atleast not many) varieties of species that grow here very easily like beets, carrots, parsnips, summer squash etc. If they grow easily from varieties not bred here, then how easily they would grow if they are locally adapted? Only things that certainly have varieties bred here are grains and potatoes with possibly some tomatoes although those might have been just passed on from close by areas rather than locally adapted. Even those might be “out dated” with climate change. Like potatoes here are mainly very short season because that’s what we had, but I’m thinking it would be nice to have potato that grows untill frost kills it off.
