What are your experiences with growing Jerusalem Artichokes from True Seed? Do they need cold stratification? Will you get a usable yield and seeds to save in the same season? I’m asking because I can’t decide between potatoes and Jerusalem Artichokes eight now

I plant Sunroot seeds in my normal germination chamber, and eventually they germinate. People tell me they need cold-stratification—perhaps they prefer it, but don’t require it.
About 15% of plants of F2 wild x domestic produce great offspring.
They have created a terrible weed problem for me.
